Green Bean Salad

Delicious green bean recipe perfect for making ahead of time.

1 lb frozen or fresh green beans, cut 1” pieces

1 teaspoon Garlico* (or sub recipe)

2 lemons

½ teaspoon salt

¼ cup olive oil

Mint, dry or fresh

  1. In a serving bowl add Garlico, squeeze two fresh lemons, salt and olive oil to make a dressing.

  2. Steam green beans until al dente (firm to bite, not soft and mushy), then sit until room temperature.

  3. Toss green beans in large bowl with dressing.
  4. Recipe is best if made the night before so green beans absorb the juice.

  5. When it’s time to serve, add dry mint or fresh mint for added flavor.

*A note about Garlico, sold by Al Amir Fresh Foods; it can be found at Fred Meyer in the deli section. Sub Recipe: If you do not have Garlico, then whisk together five minced cloves of garlic, 2 Tbsp lemon juice, pinch of salt and 3 tablespoons olive oil. Mix well.
