GRILLED KALE PASTA SALAD
1 bunch kale, stems removed
1/2 t granulated garlic
pinch of salt
1 T + 1/2 c extra virgin olive oil
4 garlic cloves
3 T fresh lemon juice
1 T fresh oregano leaves
1/2 t salt
1 t ground black pepper
1/2 lb (dry weight) desired pasta, such as Fusillata Casareccia
1/4 c Sicilian olives, halved
1/4 c oven-roasted tomatoes
Preheat grill to low. Toss kale leaves with granulated garlic, pinch of salt and 1 T olive oil. Grill until crispy and lightly charred, approx. 1 min per side. Remove from heat and set aside.
For dressing, combine in processor to emulsify: garlic, lemon juice, ½ c olive oil, oregano, salt and pepper. Boil pasta in a pot of lightly salted water until al dente. Toss together pasta, dressing, kale and remaining ingredients. Taste and adjust seasonings. Serve immediately.”
