Here is a healthy side dish or tasty lunch. Kale is the starting position of this dish and contains antioxidants and fiber that help manage the symptoms of Parkinson’s.
Ingredients
1 Bunch Lacinato kale (or other kale)
1 Honeycrisp apple
2 Cups blueberries
1 Lemon
4 Tbsp honey
2 Tbsp chia seeds
3 Tbsp sunflower seeds
Instructions
- Wash and chop the kale into small bite size pieces.
- Grate the apple and add to the kale.
- Add blueberries.
- Mix honey and the juice of one lemon and add to the mix.
- Top with chia and sunflower seeds, and toss well with tongs.
