Kale and Apple Salad

Here is a healthy side dish or tasty lunch. Kale is the starting position of this dish and contains antioxidants and fiber that help manage the symptoms of Parkinson’s.

1 Bunch Lacinato kale (or other kale)

1 Honeycrisp apple

2 Cups blueberries

1 Lemon

4 Tbsp honey

2 Tbsp chia seeds

3 Tbsp sunflower seeds

  1. Wash and chop the kale into small bite size pieces.

  2. Grate the apple and add to the kale.

  3. Add blueberries.

  4. Mix honey and the juice of one lemon and add to the mix.

  5. Top with chia and sunflower seeds, and toss well with tongs.
