Chef Kenny James, personal chef to some of the Portland Trail Blazers greats, is back to share a quick and seasonal salad perfect as a gameday side dish or a healthy lunch. Kale is the starting position of this dish and contains antioxidants and fiber that help manage the symptoms of Parkinson’s.

Instructions

  • Wash and chop the kale into small bite size pieces.
  • Grate the apple and add to the kale.
  • Add blueberries.
  • Mix honey and the juice of one lemon and add to the mix.
  • Top with chia and sunflower seeds, and toss well with tongs.
